They are one of my favorite veggies. So, I stocked up on those and some other great end of summer veggies. If I'm not eating red peppers raw, dipped in hummus, it is most likely that I am roasting them. I didn't want to turn on my oven so I decided to use the slow cooker!!<br />

* 4 bell peppers<br />
* 2 large sweet potatoes<br />
* 5 small zucchini<br />

* Peel sweet potatoes and cut into cubes<br />
* Cut zucchini into thick slices<br />
* Peel garlic cloves and cut in half<br />
* Grease inside of crock pot<br />
* Add vegetables<br />
* Season with salt, seasoning and oil. <br />
* Stir to evenly distribute seasonings and oil<br />
* Cook on low for 4-6 hours (depending on how soft you like your vegetables) stirring once every hour. <br />
* Drain any liquid and enjoy!<br />
PS - That liquid is delicious. Use it to saute chicken or fish!<br />

1) Spray the inside of your crock pot with a nonstick cooking spray.<br />
2) Line a baking sheet with foil and set aside<br />
3) In a large bowl, combine the oats and rice cereal.<br />
4) In a different bowl, combine the egg whites and honey<br />
5) Pour the eggs and honey over the cereal and toss until all the cereal is coated<br />
6) Place the cereal in the slow cooker<br />
7) Place the lid on so that there is a slight vent to it allowing the moisture to escape<br />
8) Cook the granola on high for 2 hours stirring very gently every 45 minutes<br />
9) Once the granola reaches a crunchy texture, place on the baking sheet<br />
10) Cool completely before mixing in your dried fruit etc. <br />

1) Cut carrots into 1 inch pieces<br />

4) Place corned beef brisket, fat side up, into slow cooker<br />
5) Sprinkle pickling spice and cloves over meat<br />
6) Cover brisket with water (should be at least 1 inch over meat)<br />
7) Cover and cook on low for 5 hours<br />
8) Add carrots, potatoes and cabbage and cook on low for another 3 hours<br />
NOTE: I add everything in the beginning because I cook things overnight and I don't mind my veggies really soft in this dish. <br />

6) 1/2 cup packed basil leaves<br />
7) 3 cups marina sauce (jarred or homemade - if using jarred get the no sugar added type)<br />
8) 1 large eggplant<br />

1) Mince garlic<br />
2) Chop basil to very tiny pieces<br />
3) In a large bowl, combine cheeses, garlic, egg and basil until smooth<br />
4) Slice eggplant into 3/4 inch rounds (leave skin on for more taste and nutrients<br />
5) Spray inside of crock pot with cooking spray<br />
6) Spread a thin layer of marinara sauce on the bottom of crock pot<br />
7) Place 1/3 of eggplant slices over sauce, overlapping edges<br />
8) Spread 1/2 of the cheese mixture over eggplant and spoon one third of remaining marinara over top<br />
9) Repeat with another 1/3 of eggplant, second half of cheese mixture and another 1/3 of sauce<br />
10) Finish with remaining 1/3 of eggplant and sauce<br />
11) Cover and cook on low for 6-8 hours<br />
12) If casserole is watery at the end, turn to high and uncover for 10 minutes. <br />

Add onions and garlic and saute until softened.<br />
2) Add ground turkey and cook until browned.<br />
3) Put turkey mixture into crock pot and add carrots, celery, herbs, tomatoes, water and chicken stock. DO NOT add the pasta at this time.<br />
4) Cover and cook on low for 6-8 hours<br />
5) When ready to serve, add the pasta<br />
