Beef Stew in the Crock Pot

I love love love beef stew and this one is super easy and delicious.

Beef Stew

Ingredients
1) 2 pounds of beef for stews such as chuck, chuck shoulder, bottom round roast Since you are cooking it for so long, you can use a tough piece of meat and it will be tender after 8 hours. Cut meat into large cubes.

2) 2 cups of beef stock or broth
3) 1 medium onion chopped
4) 4 carrots peeled and cut into 1/2 inch pieces
5) 3 red potatoes (I substitute sweet potatoes sometimes and only use 2) cut into cubes
6) 1 clove of garlic minced
7) 1 tablespoon paprika
8) 2 bay leaves (leave whole)
9) 1/2 teaspoon salt (optional)
10) 1/2 teaspoon pepper
11) 1 teaspoon basil
12) 1 teaspoon rosemary

Directions
1) Add all ingredients into slow cooker
2) Cover and cook on low for 8 hours
3) Remove bay leaves before eating
4) Enjoy!!!

  1. You could easily add one or two stalks of celery. Thanks for the recipes Anastasia. There are only two of us so I haven't tried them all yet, but the ones I have tried are scrumptious. Best of all they are so easy to put together and I know what we are eating. I was thinking you should put together a cook book :)

  7. I just prepared this for tonight's dinner. Thank you for taking me back to basics. With all the prepackaged foods and restaurants, we forget just how easy it is to make and enjoy GOOD food. We don't eat a lot of prepackaged food but do find ourselves going out to eat way too much, as there are only the two of us home now. Anxious to try your other recipes as well.

  10. I'm going to try this recipe this week using deer meat that my son just had processed and frozen. I'm excited to see hide it turns out! I love beef stew and this sounds very healthy. The deer should make it more so because it is VERY low fat!

  12. I love beef stew and this recipe sounds really good and healthy. I'm going to try next week using deer meat that my son had processed and frozen. This should make it very healthy as deer meat is VERY low in fat!
