Pot Roast For the Crock Pot
Ingredients
1) 2- 3 lb chuck roast
3) 4 carrots
4) 1 onion
5) 2 cups beef broth (low sodium if possible)
6) 1/2 teaspoon onion powder
7) 1/2 teaspoon garlic powder
Directions
1) Cut potatoes, onions and carrots into 2 inch pieces
2) Place chuck roast in crock pot
3) Cover roast with potatoes, onions and carrots
4) Sprinkle onion and garlic powder over the meat and vegetables
5) Add beef broth
6) Add water until meat is covered in liquid
7) Cook on low for 8 hours
When the pot roast is done, you will have meat that just falls apart. The vegetables will be tasty and cooked to perfection. If you like more seasoning in your meal, I've also added Italian seasonings, paprika and dry mustard but this simple recipe is delicious as is. As for the liquid when the pot roast is finished cooking, it certainly does make a good gravy but if you are watching your calories (like I am) you should forgo making a delicious, think gravy ;)

DeleteIt might be helpful to list the grocery list for the week ahead ot time on your blog. It is difficult to go to the grocery everyday for ingredients missing just as some feedback for you. I do appreciate the recipies, I just can't make it to the grocery everyday.

DeleteIt seems like this recipe could use some more flavor! Like salt and pepper, browning it before putting it in in the cooker, steak rub, worchestershire sauce, smashed garlic cloves, maybe rosemary, and more garlic and onion powder.

DeleteEating clean focuses much more on cutting out processed items, not really cutting calories. All the items she suggested adding aren't going to make it any less healthy. Except for the pre-made spices like the Worcestershire and steak rub maybe with their high sodium levels.

DeleteThx for the great ideas! Always helpful when we run out of ideas! I use onion soup mix mixed with a small amount of oil and water and cover with foil under lid! Keeps moisture in! Add veggies a few hours later so they do the get mushy. Use a packet of brown gravy to thicken, serve over yolk free noodles and top with fat free sour cream and chives. Looking forward to the Buffalo chicken recipe!!!

DeleteSweet potatoes will cook up a lot faster so you might want to add them later.
DeleteThis is how I normally make my roasts with the exception that I add celery. It's on cooking so I can take the day off and nap till it's done.. Now this is multi-tasking and way better than McDonalds or Taco Bell!! LOL

ReplyDeleteMy meat cooked fine, but my potatoes and carrots were still pretty crisp. I had to microwave them for a bit to get them tender.

ReplyDeleteCooked this for me and my mom. Absolutely delicious! Was worried the veggies would be mushy after 8 hours but were they were not! Roast was very tender and veggies were firm and very tasty. Will be making again. Thank you for doing this-can't wait to try the other recipes soon!

ReplyDeleteLove pot roast in the slow cooker. I just add onions and seasoning, no broth and it turns out perfect every time. Also, have you tried a pot roast covered in chili powder (Gebhardts is the best), You use the whole bottle!!! Cook for 8 hours and it is fantastic for tacos, burritos, anything like that.
This is a GREAT recipe thank you very much for sharing. I did make a small alteration recommended by my daughter. Due to my husband sugar problems my daughter said to use RADISHES instead of potatoes....."EWWWW GROSS I HATE RADISHES" I said. But for him I tried it anyway....AND I could NOT tell they were radishes! They tasted just like potatoes!
